In my latest article for Napa Valley Wine Academy, I was tasked with taking a detailed look at how changing wine consumer behaviors are impacting the on-premise world, and what the best on-premise pros are doing to ride the waves caused by those changing tides.
Since I’ve never even really attempted to work on-premise and have often said that I wouldn’t last three hours in such a demanding role (“what do you mean that you don’t like Cru Beaujolais?!??? Get the F*CK OUT OF MY ESTABLISHMENT!!!!” I instead turned to two of the best pros that I know: One Market’s accomplished Tonya Pitts (the San Francisco Wine Director who was named Sommelier of the Year at Wine Enthusiast’s 2022 Wine Star Awards), and Gravenstein Grill’s irrepressible sommelier and sociaal media maven Chris Sawyer.
