I basically re-run the same treatise on this every year, and have more or less done so for more than ten years now. My advice for choosing wines to pair with the minefield of delicious Turkey Day dishes at your disposal is as simple as it is powerful:
GO WITH HIGHER ACID WINES.
Yes, that’s it. That’s all. That is everything.
